Squid with Lime and Chipotle Chris Shenton 2003-04-07 Serves 2 as an Entree, 4 as an Appetiser This is based on tasting a Thai and Lao dish comprised of squid, lime, chili and onions though the recipe is totally made up and not authentic. I found frozen squid rings exuded lots of liquid; fresh squid worked better. Vietnamese rice noodles instead of rice had too similar a texture to the squid. It comes together quickly so you'll want to do a mis en place. 1 C Rice 4 Tbs Oil 1 Lbs Squid, cleaned, cut into rings and tentacles 1/2 Onion, cut into half-circle slices 2 sticks Celery, cut into half-circle slices 6 clove Garlic, minced 1 Tbs Sugar 2 Tbs Chili in Adobo sauce, minced 3 Tbs Fish Sauce (Nam Pla) 4 Tbs Lime Juice Cook Rice as usual, prepare squid while it's cooking. Heat non-stick skillet on high with oil. Stir fry Squid for 1 minute. Add Onion and Celery, stir fry 2 minutes more. Add Garlic and stir fry 2 minutes more.
